Grapefruit and Cheese Toastie

Ingredients used in Grapefruit and Cheese Toastie


  • loaf thick sliced white bread
  • bottle Californian red wine
  • extra mature cheddar cheese
  • salad tomatoes
  • broken grapefruit segments
  • natural yoghurt


Open the wine, and reduce by gradually consuming during meal preparation. Toast two slices of bread. Cut the tops of the tomatoes off, and hollow them out. Half-fill each tomato with grapefruit segments and top with crumbled cheese. Place the toast on the serving plate, arrange the tomatoes on top and grill until the cheese is melted. In a small dish mix the yoghurt with some of the red wine and whip until slightly pink. Pour as a sauce over the top of the toastie and serve. Ensure a glass of wine is readily available to all partaking.
