Fruity Vegetable Battenburgers

Ingredients used in Fruity Vegetable Battenburgers

INGREDIENTS:

  • conference pears
  • Battenberg cake
  • broccoli
  • crunchy potato discos
  • organic orange juice

METHOD:

Slice the Battenberg cake lengthwise, and cut each length into roughly-square sections to form the tops and bottoms of the "Battenburgers". Lightly toast these under the grill, and set aside. Thinly slice one half of a pear and set aside for later. To make the filling, roughly dice the pears and stew for a few minutes in a saucepan of orange juice until they form a pulp. Remove from the heat and add the crunched up potato discos, stirring thoroughly. Leave for a few minutes to cool, then spread the filling on the lower halves of the Battenburgers. Decorate the top with artistically arranged pear slices, and put the Battenburger tops on to serve.
