Fort Orange

Ingredients used in Fort Orange

INGREDIENTS:

  • new potatoes
  • orange juice
  • caramel shortcake bites
  • sponge finger biscuits
  • single cream
  • ice cream Crunchie bars

METHOD:

Pour orange juice into a saucepan and heat. Quarter the new potatoes without peeling them, add them to the pan, and bring to the boil.

In the meantime, remove the chocolate top from the caramel shortcake bites with a knife. Take two of the chocolate pieces and set aside for later. Break the others into shards. Take the caramel and biscuit halves and press them together in a circular ring to make a biscuit base for the dish, and stand finger biscuits in this, around the edge, to make a container. Seal any gaps with small shards of chocolate which you can soften slightly in your hand to make more pliable.

Chef Andrew uses sophisticated microcheffery techniques to separate the component parts of a caramel shortcake bite

The potatoes will now be ready, so drain them and then vigorously mash them together with one of the Crunchie ice cream bars, the cream, and some of the orange juice used for boiling. Mash until the mixture is mostly smooth. Add most of the chocolate into shards to the mix, then pour the mixture into the centre of the finger biscuit container in the hope that it might set. Plug any leaks that may appear with more softened chocolate shards.

Stick the two unbroken chocolate pieces on one side of the container to simulate a doorway, stand half a Crunchie bar in the centre of the pot and decorate with a flag on a stick, which can be made from gaffer tape if necessary. The finished dish should resemble a small castle.

Andrew: "What aisle am I on?"

Andy: "You appear to have rolled the Help Desk."

Alan: "Deconstructional cheffery at its finest."

Marcus: "It has a sort of Spanish look about it."

Andy: "Yes, but the Spanish tend to use saffron to get a yellow colour, not value orange juice."
