Black Forest Eggs With Garlic Apple Crostini

Every day at work Chef Al has to deal with vegetables

Heat the oven to 200 degrees celsius and put the garlic bread in. While the bread is cooking, take the corn and remove its outer leaves. Using a sharp knife, cut the corn from the cob and put it aside in a bowl. Remove the apple sauce filling from the pie and put in a second bowl. Retain several curled slices of the top crust of the apple pie to use as decoration.

Cut several thick slices of the chocolate cake, and carefully scoop out hollows in their centres, keeping the cake that has been removed. Fill the holes with coleslaw, and place a pickled onion inside on top. Use the removed pieces of cake to plug the holes and seal the cake slices again. Set the cake slices on a plate.

Take the cooked garlic bread from the oven. Place these alternately around the plate with the stuffed cake slices. Scoop a spoonful of apple sauce onto the centre of each of the garlic slices.

Decorate each of the onion coleslaw cake slices with two sea salt & black pepper crisps, so that they look like sails. Decorate the garlic apple slices with a curl of apple pie crust. Sprinkle corn on top of each and around the plate, and cover with a light dusting of coarsely grated lemon zest.

Serve as an appetizer, starter or dessert.
